Fresh Whole Sea Snails In Shell

Whole sea snails in the shell: heavy spiral shells banded in brown and cream, each closed with a dark, glossy operculum, and a smooth cream and orange lip around the opening. They are shown in a row on a wooden board in a working kitchen, again on a speckled stone bench in daylight, and again on a board with a pair of tongs lifting one.

The meat is firm with a clean marine flavour. Boil or steam them whole, then draw the meat out with a pick and dress it, or slice it and stir-fry.
