Fresh abalone, shucked and sitting in their shells. The meat is a pale gold, firm and glossy, ringed by a dark, finely frilled mantle, with a rim of blue-green shell showing under the edge. The meat is firm with a clean, sweet marine flavour. Steam or braise them briefly, or slice them thin and dress them.
