Fresh Sweet Shrimp Sashimi Platter

Sweet shrimp, peeled and left raw: pale pink, faintly translucent bodies, each with the tail fan still attached, deep orange-red where the roe sits. They are shown laid along a bamboo-patterned plate over a green shiso leaf with coriander and a few drops of oil, again in a row on a steel bench, and again arranged on a bamboo mat.

The meat is soft and sweet. Serve them chilled as they are with soy and wasabi, or cook them briefly — poach them, or sear them for a few seconds a side.

Keep frozen at -18°C or below. Thaw in the refrigerator before serving.
