Fresh-Frozen Snow Crab Leg Clusters

Long crab legs and claw clusters: deep orange-red shell set with fine spines along the edges, and thick white meat showing where the shell has been cut back. They are shown heaped on a steel bench, again on a white chopping board with the cut ends facing the camera, and again in a shallow bowl of broth on a wooden table, steaming.

The meat is sweet and firm and pulls cleanly from the shell. Warm the clusters through in the shell, or drop them into a hotpot at the table.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
